This is our eleventh year offering Pan'an Supreme, and we're very excited about this crop. After the winter season, gradual warming into late March produced yet another phenomenal harvest for 2020.
The tea garden from which we sourced our Pan'an Supreme is a 2 hour hike off the main road, nestled among pine trees at over 1000 meters above sea level. For three generations, the family that works this land has crafted exceptional Dragonwells using fully natural farming methods. Each tea leaf was meticulously hand-picked in late March 2020, then carefully pan-roasted to create an impressive balance of bright vegetal notes and toasted nuttiness.
Pan'an Supreme's pedigree shines through every aspect of the tea: vibrant green leaf buds, crisp sugarcane aroma with hints of snap pea and oat milk, and a brilliant, pale green liquor devoid of astringency.
We've experimented with two styles of brewing for this tea:
The first method (using the recommended quantity, water temperature, and steep time listed below) yields a classic taste that is light, sweet and smooth. Begin with a 45 second steep, adding 10 seconds for each subsequent re-infusion.
The second method uses more tea leaves to produce an intensely decadent brew. For this method, bring the water to a full boil. Fill the gaiwan halfway with tea leaves. Add water and decant immediately. This method extracts a higher concentration of the tea's flavor oils, but does so at the expense of subsequent infusions, since boiling water shocks the leaves and intensifies the astringency of subsequent brews.
