This is our eigth year offering the Panan Supreme, and we're excited about this harvest. In spite of a lunar leap year that extended the winter season, gradual warming into late March produced yet another phenomenal harvest for 2017.
The tea garden from which we sourced our Panan Supreme is a 2 hour hike off the main road, nestled amongst pine trees at over 1000 meters above sea level. For three generations, the family that worked this land has crafted exceptional Dragonwells by hand, using completely natural farming methods, and following pan-firing techniques handed down from one generation to the next. Each tea leaf was meticulously hand-picked in late March 2017, then just as carefully roasted by hand on wood fired pans.
Panan Supreme's appellation shows through in every aspect of the tea: brilliant green leaf buds, fresh floral aroma with hints of sweet pea and spring grass, clear, perfectly smooth liqueur with absolutely no astringency.

Brewing Guide

We've experimented with 2 styles of brewing for this tea, one using the recommended quantity, water temperature and steep time below, yields a tea that is light, sweet and smooth.
The second method brews an exceptionally delicious and rich tea. Bring water to a full boil. Fill the gaiwan halfway. Add water and immediately decant. This method extracts the tea's flavor oils for a brew that is intense, but does so at the expense of subsequent brews, since boiling water shocks the leaves in such a way that subsequent infusions will be astringent. Begin with a 45 second steep, adding 10 seconds for each subsequent re-infusion.
