Cultivated at over 4,000 feet above sea level in Taiwan's famed Alishan region, Jin Xuan Winter Sprout is a truly elegant representation of Formosa oolong, and one of the most unique Taiwanese teas in our collection. Known as dong pian in Chinese, winter harvests like this offer an exciting chance to discover a new side to tea. While spring harvests typically offer a bolder and more floral profile, the cooler seasonal weather gives winter harvests a more refined character, yielding pronounced notes of sugarcane and a creamy finish.
Our Jin Xuan Winter Sprout is crafted from the Jin Xuan ("Golden Lily") cultivar, the original source of milk oolong. However, compared to our standard spring harvest of Jin Xuan, our Winter Sprout leans away from the classic milky aroma of this cultivar, in favor of a crisp sweetness that instantly transports us to the fresh Taiwanese mountain air. This year's harvest is sublimely balanced — a perfect choice when you're craving a bright and uplifting brew.

This is our go-to brewing method for Formosa oolongs, since it balances each element of this style’s character. For an even sweeter and richer taste, decrease you water temperature while extending brew time; for a brighter and more vegetal taste, increase your water temperature while slightly decreasing brew time.
