    Jin Xuan, meaning "Golden Lily" in Chinese, is a relatively new Formosa cultivar developed by Taiwan's Tea Research and Extension Station in the early 1980s. This cultivar is the end result of nearly four decades of cross-breeding several Formosa varieties to yield a tea with a naturally milky taste, distinct in character from the traditional cultivars of our Alishan, Lishan and Tung Ting.

    Our Jin Xuan (Milk Oolong) comes from a high elevation garden on Alishan. Hand-gathered in May, this spring crop has a bright floral character with an undercurrent of rich buttercream and peaches. Nowadays, the majority of teas sold as "milk oolong" are actually artificial blends, produced by spraying cheaper cultivars with artificial "milk" flavoring chemicals. On the other hand, our Jin Xuan is a pure tea (tea leaves only, with no additional ingredients); its milky taste is the natural flavor profile of the Jin Xuan cultivar.

    This is our go-to brewing method for Formosa oolongs, since it balances each element of this style’s character. For an even sweeter and richer taste, decrease you water temperature while extending brew time; for a brighter and more vegetal taste, increase your water temperature while slightly decreasing brew time.
