    Hand-gathered in October at 1600 meters above sea level, our winter harvest of Alishan comes from a garden that has provided us with tea for the past seven years. This year’s winter harvest was characterized by a milder onset of cool weather, resulting in a less vegetal version of this classic tea. Alishan, Winter is floral and crisp, with a smooth texture and persistent finish.

  • Brewing Guide

    Properly brewed, our winter harvest of Alishan has a balance of floral and vegetal notes, with a creamy finish and smooth texture.

    In a gaiwan or small teapot, we prefer steeping 4.5 grams of this tea at 200 degrees for 2 minutes on the initial brew, then increasing that in increments of 30 seconds after the second brew. For lighter infusions, use cooler water and extend the steeping time.
