Time lends remarkable depth to white tea, transforming its delicate character into something richer and more complex. Our Aged Shou Mei 2016 is a beautiful expression of this evolution, pairing the lingering floral notes of its youth with the warmth and depth developed through years of careful storage.
Aged in our ventilated San Francisco warehouse, passively cooled to approximately 60°F year-round, this tea has matured slowly and steadily. These cool, airy conditions allow its character to develop gradually, preserving clarity and balance as layers of flavor emerge.
The resulting infusion brings together notes of toasted nuts and a rich, earthy foundation, reminiscent of amaretto. A gentle sweetness carries through the finish, offering a quietly captivating cup to return to throughout the day, especially as caffeine levels naturally decrease with age.

As tea ages, it becomes less sensitive to brewing temperature. However, to preserve this tea's inherent aromatic complexity, we recommend a temperature around 195F, to produce a balanced infusion and smooth mouthfeel.
