    Teas like this one, produced in a grove of old trees in the traditional region of the Wuyi Mountains, are highly valued for their concentration of flavor. The rocky terroir of this area is famous for producing distinct mineral flavors in the teas grown here. And the trees, well over the age of peak production, are maintained for the quality of tea they produce.

    This particular tea is most notable for the intense finish that lingers long after the last sip, but we're also impressed by the depth and richness of the flavor. Picked in 2013, this tea is beginning to mellow and develop the fruity flavor notes we always look for in aged teas, with a hint of tree bark at the finish that reminds us of a good whiskey.

  • Brewing Guide

    Proper temperature and steep time is necessary to extract the balanced aromatics and flavor notes of the Old Grove Shui Xian. High temperatures will unbalance the resulting brew, but using water that's not hot enough will not open the leaves. We recommend a short first brew, and then progressively longer brews thereafter.

    To brew Old Grove Shui Xian in a small tea pot or gaiwan, use 3 grams of tea with water at 200 degrees. Give the tea an initial 1 second rinse, then proceed to steep for 1 minute 20 seconds on the first infusion. The infusion should be a full amber color before decanting. Steep the second infusion for 1 minute 50 seconds, adding 30 seconds with each subsequent infusion.
