    Da Yu Lin Formosa oolong has a level of complexity, flavor and aromatics that exceeds other teas in this category. The source garden sits at approximately 2450 meters above sea level (over 8000 feet).

    True Da Yu Lin has a reputation as Taiwan’s most coveted tea. At 2450 meters, the combination of lower average temperature, short sun exposure in the morning and cooler mist-enshrouded afternoons creates an environment that slows plant metabolism. This allows more nutrients to be absorbed so that more complex flavor compounds are created and stored. This tea is quickly becoming harder to find as the Taiwanese government reclaims the land for deep rooted trees that will prevent erosion.

    As a result, the mouth feel is smooth and full. Taste and aroma changes through the life span of each brew, beginning with a buttery texture and finishing with a hint of tangerine, sugar cane and cream.

  • Brewing Guide

    Da Yu Lin has a wonderful subtlety of character that requires conscientious brewing. We suggest doing so with a lighter hand, both in terms of the quantity of tea used and water temperature.

    To brew Da Yu Lin in a gaiwan or small tea pot, we prefer steeping 5 grams of this tea at 195 degrees for 4 minutes on the initial brew, continuing at 3 minutes on the second brew, and then increasing that in increments of 30 seconds for subsequent brews. For lighter infusions, use hotter water and half the brew time.
